
I didn't make time to pack my lunch this morning (and my egg lecithin hadn't kicked in so I was oblivious to the cereal at my fingertips) so I ran to Whole Foods for lunch. For those of you who haven't explored their prepared food section you really need to check it out. They have a ton of healthy food options. They also have samples that I usually graze on but the idea of taking pictures of little squares of cheese and toothpicks seemed like a pain so I headed straight for the sushi and salad bar.
I use spinach as a base of all my salads. It is much more nutritious than regular lettuce and I always try to opt for the darkest of the leafy vegetables. I topped the spinach with turkey, red peppers, corn, carrots, and edamame (which in my opinion made the salad). I then added about a tablespoon of ginger dressing. Finally I had a brown rice and tuna roll on the side. I really did love this lunch and keep scrolling up to look at the picture. I probably shouldn't have typed that.
